Spanish Wheels

This is a quick and easy pasta recipe my family enjoys. We use wagon wheel pasta but any style can be used.

INGREDIENTS:
1 lb. Hamburger or turkey burger
½ med. Onion
1 clove garlic, minced
1 can (28 oz.) Diced Tomatoes (we like to use the ones with spiced added), undrained
2 cups uncooked wagon wheel pasta
½ tsp. Salt
1 tsp. sugar
1 tsp. chili powder

DIRECTIONS:
In a skillet, cook beef, garlic and onion over med. heat until meat is no longer pink; drain. Stir in tomatoes, pasta, salt, sugar and chili powder. Bring to a boil. Reduce heat; cover and simmer for 25-30 minutes or until pasta is tender. Serve with Parmesan cheese on top. (Yield: 4-6 servings)

I made this and Dan absolutely loved it! Part of it might be that we never have sandwiches for dinner! :)

Hearty Sausage Stromboli

½ lb bulk Italian Sausage
¼ lb ground beef
½ cup chopped onion
½ cup sliced fresh mushrooms
¼ cup chopped green pepper
½ cup water
1/3 cup tomato paste
2 TB grated parmesan cheese
½ tsp salt
¼ tsp dried oregano
¼ tsp minced garlic
1/8 tsp dried rosemary, crushed
1 loaf Italian bread
6 slices part-skim mozzarella cheese

In a large skillet, cook the sausage, beef, onion, mushrooms, and green pepper over medium heat until meat is no longer pink; drain. Stir in the water, tomato paste, Parmesan cheese, salt, oregano, garlic, and rosemary. Bring to a boil. Reduce heat; simmer, uncovered for 5 minutes or until thickened.

Meanwhile, cut top third off loaf of bread; carefully hollow out bottom, leaving ½-in shell.

Line bottom half with three mozzarella cheese slices; top with sausage mix and remaining cheese. Replace bread top. Wrap sandwich loaf in foil. Bake at 400 degrees for 15-20 minutes or until cheese is melted. Let stand for 5 min before slicing.
